As my journey with food expands and I continue to learn about a healthy more joyful way of life eating more   organic produce, creating healthy recipes and learning about really cool products out there I am just loving this healthy, happy feeling.

Over the easter weekend I made these delicious Sweet Potato Brownies. Lets just say they tasted even better than any chocolate brownie minus all the bad things for your body, no sugar, no crap. And completely RAW which means none of the nutrients have been over cooked. PURE GOODNESS.

  • 2 medium sweet potatoes, pealed and roughly chopped

  • 1 cup Macadamia nuts
  • 1 cup Walnuts
  • 1 cup Sunflower Seeds
  • 1 cup pipless dates
  • 1 fresh vanilla pod or 1 tsp of vanilla extract
  • ¼ cup coconut oil, melted
  • Pinch of Himalayan rock salt
  • 2 x TBS Raw Organic Honey

Pop the peeled sweet patats into a pot, bring them to the boil. Get those arms working & smash up those potatoes.

Nice and smooth kids.

Pulse nuts in a blender. Don’t blend for too long, we want them nice & chunky.

My brand of choice – this little magic machine can do so much – Its my favourite kitchen appliance.
